Creamy Garlic Butter Salmon Over Mushrooms & Spinach
Sometimes the best dinners are the ones that feel fancy but take less than 30 minutes to pull together. This creamy garlic butter salmon is exactly that kind of meal in rich, flavorful, and surprisingly simple.
This one is definitely a keeper quick, comforting, and perfect for when you want to impress yourself (or someone else) without spending too long in the kitchen.
the Recipe:
Ingredients (serves 2–3)
2–3 salmon fillets (skin-on or skinless, your choice)
2 tbsp olive oil (or avocado oil)
3 tbsp unsalted butter (divided)
4 cloves garlic, minced
1 cup mushrooms, sliced (baby bella or cremini work best)
2 cups fresh spinach
1/2 cup full-fat coconut milk or heavy cream (depending on your diet)
1/4 cup grated parmesan (optional for extra creaminess)
1/2 tsp paprika
Salt & black pepper, to taste
Instructions
Prepare salmon:
Pat salmon dry, season generously with salt, pepper, and paprika.
Sear salmon:
Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Place salmon skin-side down (if skin-on) and cook 4–5 minutes per side until golden and just cooked through. Remove and set aside.Sauté mushrooms & garlic:
In the same skillet, melt another 1 tbsp butter. Add mushrooms and sauté until golden, about 4 minutes. Stir in garlic and cook until fragrant (30 seconds).Make creamy sauce:
Reduce heat to medium-low. Add heavy cream(or coconut milk) and parmesan (if using). Stir and let simmer until slightly thickened, 2–3 minutes.Add spinach:
Stir in spinach and let wilt into the sauce. Season with a little more salt and pepper.Finish with salmon:
Nestle salmon fillets back into the pan. Spoon creamy garlic butter sauce over the top. Add the last tbsp of butter to melt in for extra richness.Serve:
Plate salmon over the garlicky mushrooms and spinach. Finish with a squeeze of fresh lemon.
