Vanilla Honey Baked Bosc Pears with Coconut Yogurt & Raspberries

Ingredients (Serves 4)

  • 4 Bosc pears, ripe but firm

  • 2 tbsp unsalted butter, melted

  • 3 tbsp honey (plus more for drizzling)

  • 1 ½ tsp pure vanilla extract

  • 1 tsp cinnamon

  • Pinch of sea salt

  • ¼ cup pecans, roughly chopped

  • ¼ cup pistachios, roughly chopped

  • ½ cup fresh raspberries

  • 1 cup Trader Joe’s coconut yogurt (or any creamy dairy-free yogurt)

Directions

  1. Prep the Pears
    Preheat the oven to 375°F (190°C).
    Halve the pears lengthwise and scoop out the cores with a spoon. Arrange them cut side up in a baking dish.

  2. Make the Glaze
    In a small bowl, whisk together the melted butter, honey, vanilla extract, cinnamon, and a pinch of sea salt.

  3. Bake
    Spoon the glaze over the pears, letting some pool in the center of each half.
    Bake for 25–30 minutes, basting once or twice, until the pears are tender and caramelized around the edges.

  4. Serve
    Spread a generous swirl of coconut yogurt on each plate. Nestle two warm pear halves on top.
    Drizzle with the pan juices and an extra ribbon of honey.
    Finish with chopped pecans, pistachios, and fresh raspberries.
