Chicken Santa Fe Salad
A vibrant, Tex-Mex-inspired salad loaded with protein, fresh veggies, and zesty flavors.
Ingredients:
For the Salad:
2 grilled chicken breasts (seasoned with Cholula Chili Garlic taco seasoning or a blend of cumin, paprika, garlic powder, and chili powder)
6 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
½ cup black beans, drained and rinsed
½ cup corn (fresh, canned, or grilled)
½ avocado, sliced
¼ cup red onion, thinly sliced
¼ cup shredded cheese (cheddar or cotija)
¼ cup tortilla strips or crushed tortilla chips
2 tbsp fresh cilantro, chopped
For the Dressing:
½ cup Greek yogurt (or sour cream)
2 tbsp lime juice
1 tbsp olive oil
1 tsp honey or agave
½ tsp garlic powder
½ tsp chili powder
Salt and pepper to taste
Instructions:
Grill the chicken until fully cooked, about 4-5 minutes per side. Let it rest, then slice.
In a large bowl, layer the romaine, cherry tomatoes, black beans, corn, avocado, red onion, and cheese.
Place the sliced chicken on top and sprinkle with tortilla strips and cilantro.
In a small bowl, whisk together the dressing ingredients until smooth. Adjust seasoning if needed.
Drizzle the dressing over the salad and toss gently before serving.
