Chicken Santa Fe Salad

A vibrant, Tex-Mex-inspired salad loaded with protein, fresh veggies, and zesty flavors.

Ingredients:

For the Salad:

  • 2 grilled chicken breasts (seasoned with Cholula Chili Garlic taco seasoning or a blend of cumin, paprika, garlic powder, and chili powder)

  • 6 cups romaine lettuce, chopped

  • 1 cup cherry tomatoes, halved

  • ½ cup black beans, drained and rinsed

  • ½ cup corn (fresh, canned, or grilled)

  • ½ avocado, sliced

  • ¼ cup red onion, thinly sliced

  • ¼ cup shredded cheese (cheddar or cotija)

  • ¼ cup tortilla strips or crushed tortilla chips

  • 2 tbsp fresh cilantro, chopped

For the Dressing:

  • ½ cup Greek yogurt (or sour cream)

  • 2 tbsp lime juice

  • 1 tbsp olive oil

  • 1 tsp honey or agave

  • ½ tsp garlic powder

  • ½ tsp chili powder

  • Salt and pepper to taste

Instructions:

  1. Grill the chicken until fully cooked, about 4-5 minutes per side. Let it rest, then slice.

  2. In a large bowl, layer the romaine, cherry tomatoes, black beans, corn, avocado, red onion, and cheese.

  3. Place the sliced chicken on top and sprinkle with tortilla strips and cilantro.

  4. In a small bowl, whisk together the dressing ingredients until smooth. Adjust seasoning if needed.

  5. Drizzle the dressing over the salad and toss gently before serving.
